During the last weekend, I was able to attend the three (3) Hours Home Brewing Workshop in Institute for Coffee Excellence located at the Sheridan cor Pines St Highway Hills, Mandaluyong City. Let’s take a little coffee trip to Institute for Coffee Excellence.
Michael Harris Lim, the 2019 Philippine National Barista Champion and He also the Founder of ICE. First Filipino to make it to the semi-finals of the World Barista Championship in Boston, USA, Opens the Institute for Coffee Excellence, an educated institution that offers world-class training standards for specialty coffee industry.
After successfully sharing his advocacies in the international stage, Harris continues to carry out his life's work of creating a fully-sustainable coffee economy and takes another step towards realizing this vision-by officially opening the Institute for Coffee Excellence.
Since Harris' first ventured in the coffee business in 2001, he has been committed in providing solutions to elevate the quality of local crops and equip Filipino farmers with tools and knowledge to help them keep up with the evolving industry. And He was able to see the industry in the perspective of a barista which made him realize that they also needed training in delivering the best coffee experience. Harris envisions the institute as an instrument in fostering a community that works together for sustainability to achieve the ultimate goal of having steadily increasing food and coffee security for the Philippines and for the future generations to come.
Also, Harris actively supports coffee-producing communities in Benguet through the platforms he built such as the Foundation for Sustainable Coffee Excellence (FSCE) and The Giving Cafe, his eagerness to create greater initiatives that will benefit the local industry never ceased.
Argenel Vegas, 2019 Philippine Brewer's Cup 3rd Placer. Our Instructor for that day's Basic Brewing class. He connect with us and shares the basic needs and important details when you're brewing your own coffee at home. You should have listen to him, because every details is important to make your own coffee.
We had a chance to brew our own coffee after the Brewing sessions, our Instructor decided to group us into three each group and we need to choose whether it's Brazil Pra or Vietnam Pra Coffee and our group used the Vietnam Pra Coffee, It has a caramel and chocolate hints for me. I enjoyed these two flavours, it's kinda different from the others. And also, we used the French method as well. I learned so much from Argenel Vegas our Instructor.
You can also visit, The Giving Café, (in front of ICE) which they also owned. And I will recommend the menu from dishes, cakes, coffee and their tea.
